Sodium fumarate, also called disodium fumarate, is a compound with the molecular formula Na2C4H2O4. It is the sodium salt of fumaric acid, used as an acidity regulator in processed foods. Sodium fumarate and fumaric acid are sometimes used as terminal electron acceptors in the cultivation of certain anaerobic microorganisms. It appears as an odourless, white, crystalline powder and is soluble in water.

This product is a new preservative food additives, mainly for meat and seafood categories of food, mainly used in conjunction with sodium acetate, used in foreign countries more. Also used to configure wine, soft drinks, confectionery products, powdered juice, canned fruit, cold drinks, jams, jellies and the like. Also for the configuration of bread, cookies and other complex type of leavening agent. Often combined as sour agent and malic acid, citric acid and other organic acids.
